I apologize in advance

How sad that I’ve been reduced to this!  Here’s the deal.  Life has been busy.  There’s been furniture shopping (ordering, actually, nothing to show yet) and clothes shopping (TJ Maxx and Jones New York ROCK!) and book reading and deep thinking and self-evaluation going on and while I *have* been knitting, the time I used to spend photographing said knitting is now being used to make sure I have healthy food to eat. 

I’ve started working out in our office building’s gym on my lunch break, which means I have to bring my lunch to work rather than driving home for a quick bite or grabbing something from the deli downstairs and spending an hour knitting in my car because I hate the breakroom.  I do – life is too short and I’m negative enough – spending time in the breakroom just irritates me.

I’m sure a lot of you bring your lunch to work too, so when I was making my sandwich this morning, I grabbed the camera and thought I’d share what I’m having for lunch today.  After my workout.

First I lay out a sheet of plastic wrap on the counter, then spread hummus on a piece of Flatbread.  You could use a tortilla or pita, too.

Then I take my chopped up veggies:

Mushrooms, grape tomatoes, cucumber and broccoli sprouts.  You could add or substitute items as you wish!

Pile them on the flatbread, roll that sucker up and voila!

A healthy and nutritious lunch!

And we just got a tornado warning so I’m going to sign off now!  Ciao!

    Uh oh. Deep thinking and self evaluation always get us in trouble. Good for you working out, though. I jogged for 5 seconds on Sunday and needed a whole cake and a six pack of beer to recover.

    No apology needed. I’m rather lazy about lunch and I do want to knit, so I bring a hard boiled egg and an avocado. Your lunch looks so much better!

    Great idea to spread the hummus on the flatbread. I’ll take mine with garlic- thank you- oh, and a breath mint after.

    I might do a riff on that for rides. It looks great and I could use something portable to eat while I ride. I tend to get tired around mile 18 or 20, and I think it’s because I’m not a very good eater, and we have to start so early.

    You, however, totally rock for working out at lunchtime!

    I give you credit on that lunch there… My inner child cries “where’s the meat and cheese?” and then gets scared. On the other hand, that’s just one of the reasons you’re in much better shape than I am! :P

    Congratulations on taking care of yourself, it takes a lot of discipline and control. Proud of you. :)

    Your sandwich is really making my hungry!! Looks yuuuuuummmmm! You aren’t the only one that sits in her car for lunch :) I’ve been thinking about bringing my exercise bike to work and putting in an empty office… I really should…

    Oooo, that looks very yummy. I love hummus. Now what to substitute for the cukes. I don’t do cukes. To me they’re just unfinished pickles. :-) Enjoy your lunch!

    Looks great! After four days on the road I am very much looking forward to making and eating my own food.

    (And I feel the same way about break rooms. But it’s too damn hot here to spend one’s lunch in the car!)

    Yummy-looking lunch! Even though I’m working from home, I’m often still too lazy to make lunch. Those pictures are making me hungry, though!

    Good looking sandwich there. My version would have red onions instead of sprouts but it’s all good.

    So when you work out at lunch, do you have more energy in the afternoon or less?

    That lunch looks amazing!! We are getting better at it, but I’ve found we make much less progress on other things (um, not like we really made much before!) since really taking our eating habits by the reigns, it’s a bit time consuming to plan & execute healthy meals all the time, next to get better at improvising ;)
