salad spinner

Yes, I’m turning into a kitchen accessory.

I finished the blue Romney for mittens.  And now I’m not sure that I want to use it for mittens.  It’s a bit scratchy, so I’m going to knit a swatch and carry it around and see if I think I would wear a pair of mittens from this yarn.  It’s the perfect weight, I got close to 400 yards from 3.3 ounces of roving.

I may use this Shetland instead.  It’s from the fleece I got at SAFF and is very soft.  I could spin up some white alpaca to go with it….oh, the possibilities!  I need to get cracking though, since we leave Saturday for the beach and there’s no room for my wheel in the car.  A decision will have to be made before then!

This is the yummy salad I had for lunch yesterday.  During the week I have a salad for dinner and a heartier lunch (the treadmill makes me ravenous) but on the weekends I swap it up.  This salad had mixed greens, red onion, cucumber, bell pepper, tomato, half an avocado and a sprinkling of roasted pumpkin seeds.  I make my own dressing with 1 tblsp. of basalmic vinegar and 1 tsp of olive oil.  It is so good!  Perfect for summer and easy to make.  The fun part about making a salad is seeing what you have in the fridge and going from there.  As long as you have a bed of greens, you can pretty much throw anything on there and it’ll taste good. 

I’ll be eating lots of these at the beach and trying very hard to avoid my MIL’s poundcake.

    that shetland is NICE. and are you getting lots of fresh veggies? growing any in your own garden? or just finding great stuff at the farmer’s market? seeing the tomatoes in your salad makes me yearn for them, given that salmonella scare and the non-existence of tomatoes anymore. i have two ever-growing tomato plants in my backyard that i cannot wait to harvest!

    That salad looks awesome! It looks soooo….fresh. If it gets too hard to stay away from the poundcake, just remember there’s a reason they call it that. After that, if you still must have some, then have a small piece (eat it slooowwlllly) and forget about it. Don’t beat yourself up and just continue on with the next meal.

    I say that if you are going to cheat on your diet, do it up right and get it over with. Better to do it in one day. Don’t spread it out and make it a habit.
