How about a recipe?

The days are getting longer and HOTTER – it reached 86 earlier this week – and let me just say I am NOT ready for summer!  I’d even go so far as to say I HATE summer.  There.  It’s out there.  I hate summer.  Spring?  Fall?  Love ‘em.  Love winter especially, the entire two weeks that it’s cold enough to wear my woolies.  But summer?  I could do without it.

This new recipe for healthy pasta salad just might get me through it.

It’s not much more than a list of ingredients, which is nice because in the summer, you really don’t feel like doing much.

In a large bowl, mix together:

Diced:  1 red bell pepper, 1 yellow bell pepper, 1 bunch green onions

Drained and rinsed:  1 can black olives, 1 can chickpeas, 1 can kidney beans

Microwave 1 cup edamame beans (soy beans) with 3 T water for 2 minutes, drain and add to bowl

Cook 1/2 package of tri-color pasta until al dente – do not overcook!  Rinse under cold water and add to bowl

Add 1/2 cup of fat free Italian dressing, sprinkle with Mrs. Dash or whatever seasoning mix you prefer, and enjoy!  It’s healthy, it’s filling and it makes a great lunch salad!  You could personalize it with seasonal veggies – I think squash and zucchini would be really good in this.

btw - did any local folks see Fox 6 News last night when they reported that Birmingham is one of the fattest cities in the U.S.?  They titled their story “Sin City” and carried on about gluttony and sloth, but then on the 10:00 news, they totally changed the story to “Fat City.”  I guess the truth was a little too biblical for some viewers. 

For the record, I blame the heat.

    Welcome to the club! Philadelphia was announced as being the fattest city in 2000, I think. Our then-mayor tried to get us to eat eggplant cheesesteaks. We were having none of it.

    That does sound really delicious. Thanks for the recipe! I love summer, it’s my favorite season. But I imagine our summer is much more bearable than yours.

    it was 86 degrees yesterday at my house. but it was dry. today it’s in the 70′s.

    the salad looks good.

    I like that salad – it’s one of my favorites, though I usually skimp and use only the bell peppers and some cooked chicken. The Bug would love it if I’d add olives, though…

    that looks good, despite the fact I just pigged out at a reception. It is cold in the Sheraton, and there are bikers and Harleys everywhere.

    Isn’t that political incorrect? Shouldn’t be be the “Biggest Boned City”? That would be much more fun to make fun of than just plain old fat. Or what about “The Huskiest of the Husky Cities”? Though that might confuse dog lovers.

    Ugh. I’m right there with you on the heat. I might put a countdown till Fall timer on my blog. Just to give me something to look forward to when I’m sweating half to death. LOL

    I hate summer (in the South & other places where it’s HOT)too!!! Never seen a prettier picture of a pasta salad anywhere……
