Elizabeth’s Gourmet Pizza

Grace wasn’t the only one making pizza this weekend!  I made this Friday night:

Before baking and after.  It was really, really good.  It’s easy and we almost always have the necessary ingredients on-hand.  Here’s my recipe, in case you want to try it:

Elizabeth’s Gourmet Pizza

INGREDIENTS – Crust

1 package dry yeast

1 cup warm water

2 ½ cups all purpose flour (1 use 1 ½ cups all purpose and 1 cup whole wheat flour)

2 tablespoons olive oil

1 teaspoon sugar

1 teaspoon salt

INGREDIENTS – Herb base

¼ cup fresh basil leaves

¼ cup fresh rosemary

¼ cup fresh oregano

½ teaspoon garlic powder

½ teaspoon red pepper flakes (adjust according to taste)

2 tablespoons olive oil

INGREDIENTS – Toppings

3-4 ripe tomatoes, sliced

¾ – 1 cup fresh basil leaves, cut into strips

Mozzarella cheese

Parmesan cheese, freshly ground

Dissolve package of dry yeast in warm water.  Add remaining ingredients, mix well (I use a fork).  Cover and let sit.In a mortar (or glass bowl), put ¼ cup of basil leaves, rosemary, oregano, garlic powder, red pepper flakes and olive oil.  Muddle with pestle (if you’re using a glass bowl, grind with the bottom of a glass or whatever you have on hand).  Preheat oven to 350 degrees.

Spread crust dough onto lightly greased large baking stone if you have one, or lightly greased large pizza pan.  Roll out flat, pinch edges to make them stand up.  Spread herb base onto dough, as evenly as possible.

Top with sliced tomatoes and sliced basil.  Sprinkle with mozzarella and parmesan cheese, and other cheese if you like.  I love using blue cheese if we have it, but that may be too strong for some palettes.  Feta or goat cheese is a good substitute. 

Bake in middle of oven for approximately 30 minutes, checking after 20 minutes.  Enjoy!

Don’t you love those old aluminum needles?  My mom gave me those the last time I visited – circa 1970s.  I love those stitches so much I’m gonna give you a closeup.

One bag of Twize in Twack (now THAT’S tweird!), 100% bamboo yarn, and one bag of Pure Soy Silk in Blue Depths.  The folks at SWTC are VERY generous, and it’s a good thing too, because my yarn budget has just hit rock bottom.  Our roof started leaking Saturday, so we’ll have to buy a new one.  I can’t tell you how much this sucks.  We haven’t even been in the house a year and have had countless things go wrong.  That’s life, though, right?  At least now it’ll be done and we won’t have it hanging over our heads anymore (so to speak) right?  I’m trying to keep a positive outlook.  My “I knit for yarn” mantra has never been truer.  Test knits, anyone?  Send ‘em here.

Last week, Mack helped us battle the grain moths that descended upon us like a herd of locusts.  He guarded the bare cupboard.

Good kitty. Bad moths.  Bad former owner who lived here eight years and didn’t have a damn thing go wrong on her watch, nah, she saved it all for us.  I’d like to drive to Boston and give her a sound thrashing piece of my mind.

    OMG, me too! It’s called Mountain Stream, I think. It’s so great when you finally, FINALLY, hit upon the right stitch for the right yarn. Everything else I tried was just awful. Colors pooled unattractively, it just didn’t show how pretty the yarn really is. And – I bought it on clearance, so cheap! Yay!
